An incredible explosion of flavours is in store for you with quiet sophistication and elegance.
What will you try for starters of the regular 5-course menu? Wild shellfish broth perhaps or Wild Wood Pigeon with broad beans and Baby Gem. Or maybe St Tola Goat’s Cheese with Baby Beets, Hazelnut and Wild Pineapple Weed.
I wonder after a Wild Elderflower Sorbet will you relish the 30-day Aged Irish Beef Fillet with Onion, Wild Ramson and Full Bone Gravy. Alternatively, you may want Wild Halibut from Kilmore Quay or Monkfish out of Dunmore East caught that morning. I wonder if you indulge and sample the delights from Healy’s Farm, just down the road, the fresh wild game or maybe you fancy their famous Ricotta, Squash, Fresh Egg Pasta, Pine Nuts with Burnt Butter!
The choices are mouth-watering.
But my friend, my recommendation to you is to put the choice in their hands, as I did and let them tantalise your senses with the Organic and Wild Food Sample Tasting Menu with paired wines.
Nine courses of pure art. Edible art from the Hedgerow, the Fields, the Sea and the Farm. It is one mouth-watering sensation after another, and if you are lucky, they will feature —-Wild Sloe, Dark Chocolate Fondant with Wild Beech Booze Bilberries from the local farms. I can tell you it is a fantastic end to a stunning meal.

……. The food in The Strawberry Tree was exquisite; however, I’d recommend not gorging oneself on the delicious bread, keeping enough stomach space for the desserts that will make you weep with joy! Our room was spacious, and we enjoyed a wonderful view of the glorious grounds, including a team of ducks. ….. If you’re looking for a substantial country retreat, this is the place for you. Great outside spaces for strolls or sitting, large sofas for lounging, and a staff of people so willing to make you feel welcome and special.

We enjoyed our Golf play and stay, two nights, including dinner in the Italian Restaurant and a round of golf on the amazing Macreddin Golf Course. We also had dinner in the Strawberry Tree Restaurant, which was very special, up there with Michelin Star restaurants. The food in the bar was also excellent. We found all the staff to be very friendly and welcoming. Any questions or requests we had were dealt with very professionally. The chickens and ducks definitely added to the overall atmosphere of being away in the country, but we were only about an hours drive from Dublin!

BrookLodge hotel Wells and Spa exceeded our expectations. The staff are very welcoming, and our room was beautiful. We choose the 9-course tasting dinner in the Strawberry Tree Restaurant, and it was exceptional. Breakfast was delicious. The landscape is fabulous with the free-range hens walking past give a feel of a real natural retreat! Also, the Spa is terrific. Still feeling the benefits of a full body massage. We will be back. It’s a hidden gem!

What a beautiful resort in a gorgeous location. The room was beautiful with a big comfortable bed and a choice of feather pillows (which I love). The facilities in the room were first rate. I cannot think of a thing to criticise about the hotel. The staff are so helpful and welcoming, and nothing was too much trouble. Do yourself a favour – stay here!
